Molasses are usually produced in rural areas or small-scale businesses using the open cauldron method at high temperatures such as 100-110°C. However, in this method, due to the high temperatures, some of the sugar in the fruits burns and HMF (Hydroxymethylfurfural), a carcinogenic substance, is formed. To prevent this risk, molasses should be produced in vacuum cauldrons at lower temperatures such as 60-65°C. In this way, the natural nutritional values of the fruits are preserved and a healthy production process is ensured.
